Introduction

A 7-day hands-on course in dairy fermentation and fresh cheesemaking.

This one-week course introduces you to the world of traditional European dairy products—from milk science to cultured creams, from yogurt and butter to fresh cheeses ready to eat or age.

In our professional lab, you’ll learn by doing: fermenting, coagulating, draining, pressing, and salting your products. You’ll begin to understand how time, temperature, acidity, and microbial life shape the textures and flavors of dairy products.

What You Will Learn

  • The principles of milk composition and handling for dairy and cheese.
  • The use of bacterial cultures, enzymes, and acids in fermentation.
  • Key dairy fermentation techniques and flavor development.
  • Step-by-step processes to make fresh cheese, butter, yogurt, and more.
  • How to manage temperature, moisture, and microbial life to affect outcomes.

Objectives

  • Gain confidence working with raw and pasteurized milk.
  • Learn the core cheesemaking techniques used across Europe.
  • Safely use rennet and cultures to produce a wide range of dairy products.
  • Understand how fermentation works and how it shapes flavor and texture.
  • Lay the foundation to continue into advanced cheesemaking or home production.

During the Course, You Will Also

  • Receive a printed and digital course manual.
  • Receive an ACS notebook, pens, and a custom ACS work shirt, apron, and hat.
  • Taste and evaluate more than 25 dairy products.
  • Experience instructor-led tastings and guided sensory development.
  • Enjoy meals cooked with our own fresh and aged dairy products.

Here, even meals are part of the experience—each one a reflection of the values we teach: quality, simplicity, and honest ingredients.

Who is this course for?

Food lovers, chefs, beginners, and anyone who wants to explore the world of dairy and cheese. Whether you’re curious about fermentation or planning to start your production, this course will give you the confidence and knowledge to begin.

Did you know?

  • The structure of milk proteins—primarily casein micelles—is what allows milk to transform into cheese through acid or enzymatic coagulation.
  • Lactic acid bacteria used in dairy fermentation are responsible not only for acidification but also for complex flavor and texture development.
  • The temperature and duration of fermentation directly influence curd firmness, moisture content, and microbial viability in the final product.
  • Different styles of fresh cheese—like chèvre, fromage blanc, or quark—are often made with nearly identical ingredients; what changes is the fermentation curve, draining technique, and salt level.
  • The butterfat in cultured cream or butter acts as a carrier for aromatic compounds produced during fermentation, which is why flavor blooms as fat content increases.
  • Pasteurization doesn’t just reduce microbial load—it alters milk’s calcium balance and protein structure, which can affect curd formation and yield.
  • Proper pH tracking is essential in professional cheesemaking. Most fresh cheeses are drained between pH 4.6 and 5.0 to ensure safety and desired texture.
  • Many “traditional” dairy products once thought to be regionally unique—like yogurt, kefir, and sour cream—are now understood as variations on universal fermentation principles applied to local milk types.
